Roasted Parsnip Fries with Curry Yogurt Dip

French fries and rich mayonnaise-based dips are always on our mind but we know eating mayonnaise is not always the healthiest option. Thankfully fresh yogurt made by Yomee and a little elbow grease at home can yield a substantial snack that may have you reconsider your cravings for something fried!

Parsnips are naturally sweet, fiber packed alternative to standard potatoes and bake into delicious fries in your oven. Pair with curry infused fresh yogurt for a flavorful and protein packed dip that’s a hit with kids and grownups either as a side dish for dinner or an afternoon snack on the weekends. 

2 pounds parsnips, scrubbed and patted dry
Extra virgin Olive oil
Salt and pepper

Curry yogurt dip

1 cup fresh homemade Greek yogurt
1 tablespoons high quality curry powder
1 tablespoon maple syrup
1 teaspoon fresh lime juice
1/2 teaspoon Salt

Heat oven to 425 degrees and line a large baking sheet with parchment paper. Slice parsnips into even french-fry shapes no thicker than 1/2 inch thick. Toss fries with a few healthy splashes of olive oil and spread in an even single layer over the sheet (use two sheets if the fries are stacked on top of each other or crammed together). Sprinkle and season with salt and pepper.

Bake for 20-30 minutes, flipping fries over at about 15 minutes. Fries are done when they are tender and well browned on the outside. While the fries are baking, whisk together the dip ingredients and keep chilled until ready to serve. Serve fresh baked fries immediately while still hot with the chilled dip.
